Purple sweet potato is a food ingredient that contains carbohydrates, therefore purple sweet potato is also considered an alternative food to replace rice in some villages. So far, purple sweet potato processing in Gayamharjo Village has mostly been boiled, made into cassava, fried, made into tiwul, and so on. There has been no innovation in processed purple sweet potatoes that makes the appearance of purple sweet potatoes more attractive to look at and taste, especially for children, most of whom do not like this processed food. To realize this goal, it is necessary to carry out socialization methods, cooking competitions (practices), and training. There are several purple sweet potato creations in the competition, namely rainbow cake, chocolate pandan purple sweet potato, pop purple sweet potato, rainbow gethuk, madusari, purple sweet potato caramel sponge cake, sakura cake, and purple sweet potato tumpeng cake. The enthusiasm of the participants in preparing food and participating in this training was very great. This can be seen from the activeness of the participating mothers when asking questions in the question and answer session. After participating in this community service activity, participants gained new insights and experiences, including knowing traditional food processing techniques, especially purple sweet potatoes, good and safe food coloring, tips and tricks on how to choose purple sweet potatoes, displaying and decorating food, and how to increase energy. selling these processed purple sweet potato creations.
